AMERICAN MEATLOAF WITH DOUBLE GLAZING.
I love America and their food. One of my favourites is their meatloaf. It's a comfort food, but very practical. We usually make a large one so that there's plenty for the next day sandwiches or pita pockets for our packed lunches.
Ingredients:
For the loaf:
1 kilo of minced steak (75% lean & 25% fat)
1 medium onion
1 cup of fresh breadcrumbs
a handful of freshly chopped parsley
1 tsp of garlic powder
a splash of Worcestershire sauce
1 cup of freshly grated Parmesano cheese
2 eggs
2 slices of fresh white bread, without crust, which has been crumbled into tiny pieces, you can add milk to soften.
salt & Pepper
For the glaze:
1 cup of Heinz ketchup
2 splashes of Worcestershire sauce
1 tsp of mustard powder
3 tbsp of brown sugar
1 tsp of garlic powder
1 tsp of onion powder
1 tsp of cayenne pepper
salt & pepper
Mix all the ingredients together before making the loaf , then sit aside. This will blend the ingredients together well.
Method for the loaf:
- Chop the onion very finely and sauté them in a little oil until they are soft and translucent. Allow to cool.
- In a bowl, add the minced beef and add all of the ingredients as stated above, including the cooled onions, mix well together with your hands until all the ingredients have combined well together.
- Preheat your oven to 180c. And prepare a oven tray with a rack. You will also need a flat baking sheet with holes, to allow the juices to drip down into the tray below. We don't the meatloaf to cook in its juices and this will allow the hot air to circulate around the loaf.
- Mould your loaf using your hands onto the baking sheet with holes, long and same size all the way. Tuck the sides of the bottom all the way round.
- Pour half of your glaze mixture over the loaf and spread evenly.
- Place in the oven for 45 mins, middle shelf. After 45 mins, remove from oven and spread the remaining glaze sauce over and again, spread evenly. Place back into the oven for another 20 mins, and rise the temperature to 200c.
- When done, allow to sit for about 10 minutes before moving it onto a serving dish. When moving the loaf, use a long spatula.
